As per title, which gauge would you guys recommend to keep an eye on the a/f ratio etc... ?

The EGT gauge is only good once you know what the safe combustion temps of the engine are, and that can only really be found out safety on a dyno with a knock sensor and wideband anyway.
Dont get me wrong, they are good for figuring out an average running temp and then watching out for temp spikes, but they are slower to react that widebands and you can get cheap wideband sensor/gauge combos that tell you exactly what a/f ratio you are running at any time, if thats all you want to know.

Both wideband and EGT sensors sit in the exhaust stream, so they are looking at the results of combustion.  The knock sensor is on the engine and will tell you when knocking occurs - but imo that is a bit late.

I would say the A/F sensor is more versatile in that you can tune for particular values and richen up or lean out as you feel it\'s safe to do so.  The EGT gauge isn\'t going to let you tune the A/F ratios, but will tell you when you\'re getting too lean as temps will go up.  But as Ben said, you still need to know what good values are for your setup.

As for speed of operation, there probably isn\'t much to chose between them - the EGT probe has very low thermal inertia, so it will react quickly to exhaust gas temp changes.
