Can someone please tell me what the connecter in the pic (red one) does as it is floating free! And also is the purple coloured connector my water temp sensor, and if so can i use it for my new temp gauge sensor location, thanks a lot.

The sensor you have marked in purple is the coolant level sensor. The sensor you have marked in red is not a mazda sensor, someone will have drilled and tapped to fit the aftermarket sensor. If you do not have the gauge still in the car, you could fit you new sensor in the same place and run your new gauge. You will find gauge a little slow to react until car has warmed up as this point is after the thermostat.
